On holiday in Mexico is it best to use US dollars or pesos?

Always pay in pesos. It is more economical in the end. The prices are in pesos and when you pay in dollars every business gives you an exchange rate that is advantageous to them and not so advantageous to you. They know how to exploit your lack of knowledge about how much things should cost and how much the exchange rate is.
